This udon noodle stir fry is a really easy, super delicious meal to make when you’re in a pinch for time. This version is vegan but you can easily add any protein you want if that’s what you’re into.

If you can’t find vegan mentsuyu you can either make it yourself or just use soy sauce and mirin in equal parts.

This recipe is fairly basic but easily adaptable to your tastes.  If you like spice you can add sriracha, thinly sliced beef, tofu, or a fried egg on top.  

So just sit back, relax, and enjoy a hug in the form of warm noodles.

Directions

1 Step

In a deep skillet on medium-high, heat up both oils and toss in the onions, carrots, and celery. Sauté until slightly browned, about 5 minutes.

2 Step

Add the thinly sliced mushrooms and sauté for an additional 5 minutes. Meanwhile, bring a pot of water to boil.

3 Step

Lower the heat to medium. Add the bok choy and half the mentsuyu. Cover and simmer for 5 minutes.

4 Step

While the vegetables are simmering, add the udon to the pot of boiling water. Boil for 5 minutes.

5 Step

Add the cooked noodles and the remainder of the mentsuyu to the vegetables. Toss everything together and sauté until the mentsuyu has been absorbed by the noodle mixture.
