If you’re looking for a fresh and easy salad to make with ingredients you most likely already have in your fridge, look no further!

Green apple adds a sweet crispiness to the salad while the kale provides a sturdy base.  Mint and lemon zest add brightness and it all comes together with a lemon dijon dressing.

Directions

1 Step

If you're not using pre-chopped kale, prepare the kale by cutting out the stems and then chopping into small pieces. Add them to the large bowl.

2 Step

Add the chopped mint, green apple slices, and lemon zest to the bowl of kale.

3 Step

In a separate container, combine the lemon juice, olive oil. honey, and dijon mustard. Mix thoroughly.

4 Step

Add about half of the dressing to the salad and toss until everything is coated evenly. Add the parmesan cheese if you want a salty bite or omit it if you want to keep this salad vegan. Plate it up and enjoy!
